Step 1: Preheat your oven 375f
Step 2: Season your rack with oregano, rosemary, salt and pepper, place the rack in an open oven proof pan pop it into the pre heatd oven for 20 minutes
Step 3: Meanwhile melt the mint jelly add the garlic and parsley, pour over the lamb that has roasted for 20 minutes
Step 4: Return to the oven for a further 10 minutes or until the internal temperature reaches 160-165 for a medium, still pink rack
