Step by Step Method

Step 1

In a bowl or large measuring cup mix together the oil, vinegar and spices (oil - pepper) and then stir in the onion, basil, capers and garlic.

Step 2

Spoon some marinade on the bottom of a large baking dish. Top with a layer of tomatoes, top with some more marinade and then another layer of tomatoes and finally top with the remaining marinade; cover and refrigerate for at least 3 hours before serving.

Oh Yummy! I love the dressing that marinates the tomatoes where it pumps up winter tasting tomatoes. Great on their own, as a side, and on lettuce salad. Will be making these again. Thank you ellie for sharing! Made it for Billboard tag.

We liked this tomato salad, though it is a little different from our usual. Next time I might use a more mellow vinegar than the sherry vinegar, but we do like the taste of it. I added the basil and parsley raw at the end after marinating. Portions are generous, and this makes for a nice side dish.

These little gems are divine!!! I use grape tomatoes and subbed chopped green olives instead of the capers and it worked perfectly. I will be making this again soon.
