Ingredients

The ingredients are:
  • 1/2 cup olive oil
  • 1/4 cup sherry wine vinegar
  • 3 tablespoons parsley, minced
  • 2 teaspoons thyme, minced
  • Red pepper flakes (pinch)
  • 1 teaspoon salt
  • Pepper
  • 3 ounces red onion (sliced lengthwise, 1/2 onion)
  • 1/4 cup basil (10 basil leaves, sliced)
  • 2 tablespoons capers (drained and crushed)
  • 2 garlic cloves, sliced
  • 2 pounds tomatoes (ripe and cut into 1/2 inch thick slices)

How to Make

  • Step 1: In a bowl or large measuring cup mix together the oil, vinegar and spices (oil - pepper) and then stir in the onion, basil, capers and garlic.

  • Step 2: Spoon some marinade on the bottom of a large baking dish. Top with a layer of tomatoes, top with some more marinade and then another layer of tomatoes and finally top with the remaining marinade; cover and refrigerate for at least 3 hours before serving.
