Step 1

Peel and slice the cucumbers and place slice in a serving dish or bowl. Add the next 4 ingredients (vinegar - garlic) and toss. Add salt and pepper.

Step 2

Cover and refrigerate for one hour; stir occasionally.

We could eat cucumber salads everyday of the week we love them so much. Used english cucumbers and did not add a full 1/4 cup of lemon juice since the hubby is not real fond of tart flavors. Sliced the cucumbers a little thicker so we had a good bite when eating. Added a few shakes of lemon pepper used pink himalayan salt. Will be making this regularly and think some halved cherry tomatoes would be good as an add in. Made and reviewed for the Billboard Recipe tag game.

This is a tasty and refreshing side dish we enjoyed. The cukes have a tart and garlicky taste to them, yum.
