Step by Step Method

Step 1

In medium bowl, combine broth, tomato paste, pepper, oregano, salt and garlic. Mix well and set aside.

Step 2

Dredge chicken in bread crumbs, coating well. Heat oil in large skillet over medium high heat.

Step 3

Sauté chicken in oil for 2 minutes per side, or until lightly browned.

Step 4

Add reserved broth mixture and mushrooms to skillet and bring to boil. Cover, reduce heat to low and simmer for 20 minutes.

Step 5

Transfer chicken to serving platter.

Step 6

Spoon sauce over chicken and serve.

Delicious! Juicy chicken and meaty mushrooms is a favvy here. Served the sliced chicken breast over green tea pasta and peas. Definitely will be made again! Thanks for sharing Mike! Made for Billboard & Alphabet Soup.

Very tasty!!! The only problem with this "Low Carb" recipe is that I wanted two loafs of bread to dip in that delicious sauce. LOL.

This was so good...the chicken was nice and moist and the earthiness of the mushrooms came through...I'm glad I made it...and I plan to prepare it again...it may not be the most photogenic recipe nor the most tastiest...but it was darn good...next time I need to use up some leftover mushrooms...I'll be making this dish...I always have some chicken in the frig...made for "Bill Board" tag game...
