"Howard Wong and his family operated the Lotus Room at 1143 South Brentwood St Louis for over 30 years. Their fried rice contained no peas or carrots. Dark soy sauce gave it a rich brown color. Rice must be day old can use beef, shrimp or pork instead of chicken."

Step by Step Method

Get everything ready before you start.
Step 2
In small bowl, mix hot water, honey, sesame oil, soy sauce and pepper.

Fluff cooked rice to get out the lumps.

Add sauce and fluff.
Step 5
In hot oiled wok, add egg mixture, cook flat, remove and chop.
Step 6
Sauté onion and chicken in oil over medium heat until onions are translucent.
Step 7
Add rice mixture, mixing well.
Step 8
Season to taste, coating evenly.
Step 9
Toss in bean sprouts, scrambled eggs and scallions, mixing for 2 minutes, until heated through.
