Step by Step Method

Step 1

In a medium fry pan over medium-high heat, melt the butter and saute the potatoes until lightly browned.

Step 2

Add onions and cook until translucent.

Step 3

In a medium bowl, beat the eggs.

Step 4

Stir in parsley and salt and pepper.

Step 5

Reduce stove-top heat to medium and pour egg mixture over the potatoes.

Step 6

When the eggs are almost completely set, carefully fold the omelet.

Step 7

Remove pan from heat and allow to set and finish cooking for one minute.

Step 8

Transfer to a serving platter and garnish with additional parsley.

Step 9

In France, this dish goes by the name "omelet".
