Step 1: In a medium fry pan over medium-high heat, melt the butter and saute the potatoes until lightly browned.
Step 2: Add onions and cook until translucent.
Step 3: In a medium bowl, beat the eggs.
Step 4: Stir in parsley and salt and pepper.
Step 5: Reduce stove-top heat to medium and pour egg mixture over the potatoes.
Step 6: When the eggs are almost completely set, carefully fold the omelet.
Step 7: Remove pan from heat and allow to set and finish cooking for one minute.
Step 8: Transfer to a serving platter and garnish with additional parsley.
Step 9: In France, this dish goes by the name "omelet".
