  • 1 tablespoon butter
  • 2 teaspoons parsley, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper, to taste

How to Make

  • Step 1: In a medium fry pan over medium-high heat, melt the butter and saute the potatoes until lightly browned.

  • Step 2: Add onions and cook until translucent.

  • Step 3: In a medium bowl, beat the eggs.

  • Step 4: Stir in parsley and salt and pepper.

  • Step 5: Reduce stove-top heat to medium and pour egg mixture over the potatoes.

  • Step 6: When the eggs are almost completely set, carefully fold the omelet.

  • Step 7: Remove pan from heat and allow to set and finish cooking for one minute.

  • Step 8: Transfer to a serving platter and garnish with additional parsley.

  • Step 9: In France, this dish goes by the name "omelet".
