Step by Step Method

Step 1

Empty both cans of tomatoes into a large sauce pan.

Step 2

Add onions, and let come to a boil. Cook for 5 minutes on medium-high.

Step 3

Add cut up zucchini's and spices, and boil just until zucchini are al dente.

Step 4

Ladle out into bowls.

Step 5

Add salt and pepper to taste, and put 1 pat of butter in bowl, let melt, for some added flavor. With or without the butter, it is delicious!

Step 6

Variations: You can add bell peppers, and summer squash to this too. If you do, add another can of tomatoes, and adjust seasonings to your taste.

With lots of tomatoes and zucchini from my garden I canned a lot but wanted to save some to have some fresh vegs so I made this delicious medley. It was really yummy with a tad bit of heat from the seasoning that really added a lot to the overall flavor. This is so easy to make and serve!

I made this using the same amount of fresh tomatoes which I boiled and peeled and used a yellow zucchini. I served it up with a fresh buttered bun. Made for the Billboard Recipe Tag Game.
