Step 1
Heat the oil in a large saucepan, stir in the garlic, cook for just a few seconds.

Add the stock and bring to a boil. Reduce heat to medium, and cook for 5 minutes.

Cook over medium heat, stirring gently, until egg filaments form.
Step 5
To serve, garnish with croutons and shaved parmesan cheese.
