"Party appetizers good for any time of year. When I wrap them in plastic wrap and put them in the refrigerator, they don't seem to be soggy when served. Just make sure the cucumber is dried well, and don't skimp on the butter. NOTE: THERE IS NO COOK TIME, BUT IF YOU DON'T SERVE IT RIGHT AWAY, YOU NEED TO CHILL IT."

Step by Step Method

Step 1

Get a small bowl and mix together the first six ingredients.

Step 2

Butter each slice of bread on one side only. Lay them out with the buttered sides up, so you can add the ingredients on to them.

Step 3

Put some of the cream cheese mixture onto each slice. Next, make sure the cucumber slices are not still wet. Dry them the best you can. Place cucumber slices on three pieces of bread only. Top them with the other pieces of bread to form sandwiches. Remove the crusts from the edges of the bread.

Step 4

If you don't want to serve them right away, wrap them tightly in plastic wrap and place in the refrigerator. When you are ready, cut each sandwich into 4 triangle shaped pieces.

I mixed the cream cheese mixture up before I left for work today, and came home for lunch to a nice, cool, refreshing treat! This is our first day of sunshine since the hurricane, and the heat was steamy and intense. So this was perfect for today. Easy to make, and I love the lemon zest in the cream cheese. I was lazy and didn't seed my cucumber....should have bought an English cucumber with no seeds. Thanks for sharing your wonderful recipe!

I made these as open-faced sandwiches and used whole grain rye bread (German Schwarzbrot). Added a little thinly sliced red onion on top to be festive! Yum!

LOVE these – they are light and delicate and the dill and lemony tones adds such delicious, good flavor! For the bread, used soft oatmeal sliced bread. These wonderful little sandwiches also provide such an experience – felt like I was Jane Austin having afternoon tea at Downton Abbey, I actually felt more feminine and a proper lady! Love the flavour of the lemony cream cheese with the cucumber! Fresh and light. I served mine on a crackers with one round of cucumber on each. I doubled the recipe as I just knew it would delicious and it sure did not disappoint. This is a keeper for sure. Will be wonderful with cukes from the garden this year.
