Step by Step Method

Step 1

In a large skillet over medium high heat heat the oil and then add the next, 5 ingredients (onion - red pepper flakes), cook stirring for 8-10 minutes or until onion is softened and starts to brown.

Step 2

Stir in the next 3 ingredients (corriander - chicken), cook stirring for 8-10 minutes or until chicken is cooked through.

Step 3

Stir in the honey and mint and season with salt and pepper.

Step 4

Serve with pita breads and ricotta and cucumbers. Suggestion: spoon some chicken mixture in opened pita bread and top with ricotta and cucumbers.

Came out really nice and flavorful! The whole family enjoyed a pita pocket dinner. Followed as directed, except for seasoning the chicken pieces (used breast and tenderloins) before cooking, added lettuce and sour cream in place of the ricotta, and used pita pockets instead of wraps. Yummy. Thank you, ellie, for sharing.
