Ingredients

The ingredients are:
  • 2 tablespoons oil (olive oil)
  • 1 (8 ounce) yellow onion, chopped
  • 2 garlic cloves, minced (I did not have any garlic so used a good sprinkling of garlic powder)
  • 2 tablespoons capers, chopped
  • 1/2 cup black olives, chopped
  • Pinch red pepper flakes
  • 1 teaspoon coriander, ground
  • 2 lemons , zest and juice
  • 2 1/2 pounds boneless chicken (cut into 1 inch chunks I used chicken breasts but the original recipe said to use boneless, skinless chicken thighs)
  • 1 tablespoon honey
  • 1/4 cup fresh mint, chopped
  • Salt
  • Pepper
  • 8 pita breads
  • 1 cup ricotta cheese (I used fat free)
  • 1 cup cucumber, sliced (seedless)

How to Make

  • Step 1: In a large skillet over medium high heat heat the oil and then add the next, 5 ingredients (onion - red pepper flakes), cook stirring for 8-10 minutes or until onion is softened and starts to brown.

  • Step 2: Stir in the next 3 ingredients (corriander - chicken), cook stirring for 8-10 minutes or until chicken is cooked through.

  • Step 3: Stir in the honey and mint and season with salt and pepper.

  • Step 4: Serve with pita breads and ricotta and cucumbers. Suggestion: spoon some chicken mixture in opened pita bread and top with ricotta and cucumbers.
