Step 1: In a large skillet over medium high heat heat the oil and then add the next, 5 ingredients (onion - red pepper flakes), cook stirring for 8-10 minutes or until onion is softened and starts to brown.
Step 2: Stir in the next 3 ingredients (corriander - chicken), cook stirring for 8-10 minutes or until chicken is cooked through.
Step 3: Stir in the honey and mint and season with salt and pepper.
Step 4: Serve with pita breads and ricotta and cucumbers. Suggestion: spoon some chicken mixture in opened pita bread and top with ricotta and cucumbers.
