"Found at deliciousdotcomdotau, these easy-fix scones got my attention because 1 of the suggested finishing touches was the use of lemon curd -- 1 of my favorite ingredients as stated in my Zazz member profile. They were described as light, airy & perfect for afternoon coffee or tea. The only real problem confessed was trying to limit yourself to just 1, but why would you even consider such a silly thing? ENJOY!"

Step by Step Method

Step 1

Preheat the oven to 425F. Lightly grease a baking tray.

Step 2

Place the flour, sugar & 1/2 tsp salt in a lrg bowl. Add the whipping cream & lemonade & mix to form a soft dough.

Step 3

Turn out the dough onto a lightly floured surface & knead lightly until combined. Press the dough w/your hands to a thickness of about 3/4 inch. Use a 2.5 inch round cutter to cut 8 scones. Place them on the baking tray & brush the tops w/some milk. Re-shape scraps to make extra scones until the dough has been used.

Step 4

Bake for 10-15 min until lightly browned. Serve warm w/a dollop of lemon curd or your favorite jam.

We loved these lightly lemon flavored scones. They were very quick and easy to make, and were perfect to have with our morning coffee. We are lemon lovers, so I added 1/2 tsp. lemon extract to the dough to intensify the lemon flavor. Also, I didn't have any lemon curd, so I whipped up a quick lemon glaze and drizzled it over the top...yummy! I baked these on parchment paper for about 12 minutes and got 12 scones. Thank you for sharing this delicious recipe. It is definitely a keeper! Made for "For Your Consideration" tag game.
