"This is an easy, healthy chicken dish uses canned soup. Not a huge fan of canned soups, but I like this recipe. It has a very homey flavor, reminds me somewhat of stuffing. Try to use fresh thyme if you can. I also use a mix of wine and water to dilute the soup and a bit more than called for as I like a thinner sauce. I also like to season the breadcrumbs with salt, pepper and onion powder for a bit more flavor."

Step by Step Method

Step 1

In small bowl mix soup, water (or a mix of half water and wine) lemon juice and thyme. Mix bread crumbs and paprika on a plate. Dip chicken into 1/2 cup soup mixture. Coat with bread crumb mixture.

Step 2

Place chicken on baking sheet. Spray chicken with cooking spray. Bake at 375 F for 35 minutes or until chicken is no longer pink.

Step 3

Heat remaining soup mixture and serve over chicken.

Simple and delicious! I followed Denise’s advice to season the breadcrumbs a bit more, and to add some wine to the soup mixture. The addition of the wine always adds a nice flavor. I baked the chicken on a baking sheet lined with non-stick foil so the chicken wouldn’t stick, which worked out well. This is another nice recipe to spruce up chicken.
