Step by Step Method

Step 1

Remove any fat from lamb, cut into 1 inch cubes.

Step 2

Place chopped onions in bottom of a 3 1/2 quart crock pot. Top with chopped apple, raisins, and nuts, lay meat cubes evenly over top.

Step 3

Mix apple juice with remaining ingredients, pour over meat, cover pot.

Step 4

Cook at low setting for 8 to 10 hours, stirring once during last hour.

Step 5

Serve over hot cooked brown rice.

Wonderful recipe - the nuts are a nice addition. The only difference I made was to use a whole package of Glyco Japanese curry rather than the powdered. It is a very mild, mellow curry not sharp at all. The lamb was so great over rice. Made for Derf's cookathon
