Ingredients

The ingredients are:
  • 2 pounds lamb (lean lamb fillets)
  • 2 onions, medium (chopped)
  • 1 apple, granny smith (peeled, chopped)
  • 3 tablespoons raisins (sultana raisins)
  • 1/2 cup mixed nuts (chopped)
  • 1 1/2 cups apple juice
  • 1 lemon (juice and zest)
  • 2 tablespoons curry powder
  • 1 tablespoon brown sugar (packed)
  • 1/8 teaspoon hot sauce (Tabasco sauce)
  • 1 garlic clove, smashed

How to Make

  • Step 1: Remove any fat from lamb, cut into 1 inch cubes.

  • Step 2: Place chopped onions in bottom of a 3 1/2 quart crock pot. Top with chopped apple, raisins, and nuts, lay meat cubes evenly over top.

  • Step 3: Mix apple juice with remaining ingredients, pour over meat, cover pot.

  • Step 4: Cook at low setting for 8 to 10 hours, stirring once during last hour.

  • Step 5: Serve over hot cooked brown rice.
