Step by Step Method
Step 1
Heat oil in frying pan.
Step 2
Sauté the finely chopped onion, minced bell pepper and the finely diced celery and carrot.

Cook until onion is lightly browned.

Spray crockpot with cooking spray.
Step 5
Add veggies, beans, oregano, tomatoes and water.
Step 6
Cook on low 8 hours.
Step 7
Season to taste.
