Step by Step Method
Step 1
Season chicken inside and outside heavily with salt and pepper.
Step 2
Bake at 350 degrees 1 1/2 hours or until very tender; cool slightly.
Step 3
Debone and skin chicken.
Step 4
Cut chicken meat into bite-size pieces.
Step 5
Combine chicken, celery, cashews and sour cream and mayo (if using).
Step 6
Season to taste with salt and pepper if desired.
Step 7
Toss gently.
Step 8
Serve on bed of lettuce with melon slices.
Step 9
Garnish with additional cashews.
