Ingredients

The ingredients are:
  • 3 pound whole chicken
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup celery, chopped
  • 1/2 cup cashews, (coarsely chopped, salted )
  • 8 ounces sour cream, (1 cup)
  • 1/4 cup mayonnaise, (not in original but I think good)
  • 8 lettuce leaves
  • 1 cantaloupe, cut in 8 pieces

How to Make

  • Step 1: Season chicken inside and outside heavily with salt and pepper.

  • Step 2: Bake at 350 degrees 1 1/2 hours or until very tender; cool slightly.

  • Step 3: Debone and skin chicken.

  • Step 4: Cut chicken meat into bite-size pieces.

  • Step 5: Combine chicken, celery, cashews and sour cream and mayo (if using).

  • Step 6: Season to taste with salt and pepper if desired.

  • Step 7: Toss gently.

  • Step 8: Serve on bed of lettuce with melon slices.

  • Step 9: Garnish with additional cashews.
