Step 1: Season chicken inside and outside heavily with salt and pepper.
Step 2: Bake at 350 degrees 1 1/2 hours or until very tender; cool slightly.
Step 3: Debone and skin chicken.
Step 4: Cut chicken meat into bite-size pieces.
Step 5: Combine chicken, celery, cashews and sour cream and mayo (if using).
Step 6: Season to taste with salt and pepper if desired.
Step 7: Toss gently.
Step 8: Serve on bed of lettuce with melon slices.
Step 9: Garnish with additional cashews.
