Step by Step Method

Step 1

Combine first 4 ingredients in a large heavy-duty, zip-top plastic bag.

Step 2

Add chicken; seal bag, and shake until chicken is coated well.

Step 3

Marinate in refrigerator 8 hours or overnight, turning bag occasionally.

Step 4

Remove chicken from marinade, discarding marinade.

Step 5

Coat grill rack with cooking spray, and place on grill over medium-hot coals (350°F-400°F).

Step 6

Place chicken on rack; grill, covered, 5 minutes on each side or until done.

Really enjoyed this chicken! I wasn’t quite sure how to melt the jalapeño jelly, but the microwave did the trick! And it wasn’t too spicy! Had a mild, pleasant heat. I let it marinate overnight.

Yum! Last time I made this was on another site and I used a large chicken breast with skin. This time.....I actually made it according to the directions. lol. I marinated the chicken overnight and then grilled it the next day. This was delicious and we really enjoyed it a lot. Thanks for sharing, Teresa. Made for FYC tag.
