Step by Step Method

Step 1

Heat olive oil in large deep skillet, add onions and chicken.

Step 2

Brown chicken and onions. Add tomato paste, brown it slightly (careful to not burn).

Step 3

Add peas, potatoes and tomatoes around the chicken pieces.

Step 4

Top with the stock, parsley, salt, pepper and bay leaf.

Step 5

Cover and cook on low, simmering for 50 minutes or until chichen tests done.

Step 6

Halfway through turn chicken pieces and stir to prevent sticking.

The hubby loves peas so made this dish for him. I did use skinless boneless chicken breast, chicken stock instead of water, and added a few shakes of celery seed, love it, and lemon pepper. Had some yukon gold potatoes on hand so they went in the pot. Love bay leaves always seems to make things taste like they cooked all day and the pea s didnt get soft like canned peas would have. Nice tomato flavors in a chicken stew that we both enjoyed. Made and reviewed for Susie's World Tour - Italy.
