Step 1: Heat olive oil in large deep skillet, add onions and chicken.
Step 2: Brown chicken and onions. Add tomato paste, brown it slightly (careful to not burn).
Step 3: Add peas, potatoes and tomatoes around the chicken pieces.
Step 4: Top with the stock, parsley, salt, pepper and bay leaf.
Step 5: Cover and cook on low, simmering for 50 minutes or until chichen tests done.
Step 6: Halfway through turn chicken pieces and stir to prevent sticking.
