The ingredients are:
  • 1 pound chicken legs
  • 1 pound chicken thighs
  • 1 yellow onion (minced)
  • 2 potatoes (chopped)
  • 1 package (16 ounce) frozen peas
  • 1 can (15 ounce) diced tomatoes
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 cup chicken stock
  • Salt, dash
  • Pepper, dash
  • 1 tablespoon minced parsley

How to Make

  • Step 1: Heat olive oil in large deep skillet, add onions and chicken.

  • Step 2: Brown chicken and onions. Add tomato paste, brown it slightly (careful to not burn).

  • Step 3: Add peas, potatoes and tomatoes around the chicken pieces.

  • Step 4: Top with the stock, parsley, salt, pepper and bay leaf.

  • Step 5: Cover and cook on low, simmering for 50 minutes or until chichen tests done.

  • Step 6: Halfway through turn chicken pieces and stir to prevent sticking.
