Step 1

Fry bacon, then take out.

Step 2

In grease, add potatoes, onions and last, the green onions and parsley and pepper.

Step 3

In another pan add 1 T butter.

Step 4

In bowl, beat eggs pour into hot butter; cook until done.

Step 5

Plate, on one side put filling then fold over.

One of the best omelettes we have made. It was super duper and full of lots of goodies, love the bacon and potato combination. We left the yellow onion out, the green onion was good for us. Now I want to try potatoes in all kinds of other omelettes too!

I love omelets! This one was delicious. I really like that there was potato incorporated into it. It makes for a true, fulfilling meal. I halved all the ingredients since hubby had already gone to work, so I made it for myself. I did a very small diced on the potatoes, and started them some time before starting the eggs. Worked out beautifully. I will definitely be adding pots to my omelets from now on. Thanks for a great breakfast. Made for CQ 2015 for LBOB
