Step by Step Method
Step 1
In a small bowl combine the graham cracker crumbs, sugar, and melted butter.
Step 2
Press mixture evenly over the bottom of the prepared individual cheese cake tins.
Step 3
Bake in preheated oven for 10 minutes.
Step 4
Set aside to cool.
Step 5
Increase the oven temperature to 350 degrees F.
Step 6
With a hand mixer, beat the cream cheese until smooth.
Step 7
Add the sugar, lemon juice, and vanilla extract and beat until smooth.
Step 8
Add the egg, beating until incorporated.
Step 9
Separate the cheesecake filling into different bowls, one for each color and add different food coloring to each bowl, mixing well and adjusting color as needed.
Step 10
Gently spoon the cheesecake filling over the graham cracker base, alternating between colors.
Step 11
Bake for about 20 minutes or until the cheesecake batter is just set.
Step 12
Remove from oven and place on a wire rack to cool.
Step 13
Garnish with fresh berries, if desired.
