Step 1: In a small bowl combine the graham cracker crumbs, sugar, and melted butter.
Step 2: Press mixture evenly over the bottom of the prepared individual cheese cake tins.
Step 3: Bake in preheated oven for 10 minutes.
Step 4: Set aside to cool.
Step 5: Increase the oven temperature to 350 degrees F.
Step 6: With a hand mixer, beat the cream cheese until smooth.
Step 7: Add the sugar, lemon juice, and vanilla extract and beat until smooth.
Step 8: Add the egg, beating until incorporated.
Step 9: Separate the cheesecake filling into different bowls, one for each color and add different food coloring to each bowl, mixing well and adjusting color as needed.
Step 10: Gently spoon the cheesecake filling over the graham cracker base, alternating between colors.
Step 11: Bake for about 20 minutes or until the cheesecake batter is just set.
Step 12: Remove from oven and place on a wire rack to cool.
Step 13: Garnish with fresh berries, if desired.
