  • FOR GRAHAM CRACKER CRUST
  • 1 cup graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 1/4 cup melted butter
  • FOR CHEESECAKE FILLING
  • 1 package (8 ounce) cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1/2 tablespoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • Food coloring

How to Make

  • Step 1: In a small bowl combine the graham cracker crumbs, sugar, and melted butter.

  • Step 2: Press mixture evenly over the bottom of the prepared individual cheese cake tins.

  • Step 3: Bake in preheated oven for 10 minutes.

  • Step 4: Set aside to cool.

  • Step 5: Increase the oven temperature to 350 degrees F.

  • Step 6: With a hand mixer, beat the cream cheese until smooth.

  • Step 7: Add the sugar, lemon juice, and vanilla extract and beat until smooth.

  • Step 8: Add the egg, beating until incorporated.

  • Step 9: Separate the cheesecake filling into different bowls, one for each color and add different food coloring to each bowl, mixing well and adjusting color as needed.

  • Step 10: Gently spoon the cheesecake filling over the graham cracker base, alternating between colors.

  • Step 11: Bake for about 20 minutes or until the cheesecake batter is just set.

  • Step 12: Remove from oven and place on a wire rack to cool.

  • Step 13: Garnish with fresh berries, if desired.
