Step by Step Method
Step 1
Preheat grill to medium high. In a small bowl, stir together 1 tablespoon yogurt, ginger, 1/4 teaspoon cumin, paprika, and cayenne. Brush over both sides of chicken.
Step 2
Grill the chicken for 5-6 minutes per side, until done. Transfer to a plate, cover, and let stand 5 minutes. Thinly slice.
Step 3
Wrap pitas in foil and heat on grill (or in oven). Do not use foil if heating in microwave.
Step 4
Combine sauce ingredients in small bowl.
Step 5
To serve, spoon 2 tablespoons lettuce into each pita half. Arrange onion over the lettuce, then top with chicken. Dollop with the yogurt mixture. Garnish with tomatoes.
