Ingredients

The ingredients are:
  • 8 ounces boneless skinless chicken breasts (pounded or sliced to 1/2" thickness)
  • 1 tablespoon fat-free yogurt (plain)
  • 1/4 teaspoon cumin
  • 1 teaspoon minced gingerroot
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne
  • SAUCE
  • 1/4 cup fat-free yogurt (plain)
  • 1/4 teaspoon cumin
  • 1 tablespoon minced cilantro
  • 1 clove garlic, minced
  • SANDWICH
  • 6 whole wheat pita breads (6-inch, halved)
  • 1/2 cup shredded lettuce
  • 1/4 cup sliced yellow onion (thinly sliced)
  • 1/4 cup chopped tomato

How to Make

  • Step 1: Preheat grill to medium high. In a small bowl, stir together 1 tablespoon yogurt, ginger, 1/4 teaspoon cumin, paprika, and cayenne. Brush over both sides of chicken.

  • Step 2: Grill the chicken for 5-6 minutes per side, until done. Transfer to a plate, cover, and let stand 5 minutes. Thinly slice.

  • Step 3: Wrap pitas in foil and heat on grill (or in oven). Do not use foil if heating in microwave.

  • Step 4: Combine sauce ingredients in small bowl.

  • Step 5: To serve, spoon 2 tablespoons lettuce into each pita half. Arrange onion over the lettuce, then top with chicken. Dollop with the yogurt mixture. Garnish with tomatoes.
