"When you serve this dessert chilled you will think it’s a a cheesecake, after it has completely chilled it has the same flavor and texture, it’s also great served warm with ice cream, not only is this delicious the prep time should take no longer than about 10 minutes… this is one of my all-time favorite desserts and sure to become one of yours too! Don’t attempt to make this in one 8 or 9-inch pie shell it will not work there is too much filling, although you can separate the filling between two 8-inch pie plates for two smaller pies, and if this wasn’t already easy enough you can make it even easier by purchasing two prepared graham cracker or vanilla crumb crusts (omitting the graham cracker crumbs and butter in the recipe) just mix the filling and divide into the crusts then bake for 30-35 minutes, the prep time will only be about 5 minutes! … this makes a great dessert to take to a potluck as you can make it a day ahead Use your choice of either blueberry, cherry, raspberry or apple pie filling or any pie filling you desire, plan well ahead there is a 6 hour chilling time even better if left for 24 hours Cook time is chilling time"

Step by Step Method

Step 1

Preheat oven to 350 degrees F (oven rack set to lowest position).

Step 2

Grease an 8 x 8-inch baking pan.

Step 3

In a bowl combine the cracker crumbs with melted butter until combined, then press into the bottom of the pan.

Step 4

In a bowl whisk the condensed milk with sour cream and lemon juice until well blended; pour over the crust

Step 5

Spoon the pie filling over the top (some will sink slightly that is okay).

Step 6

Bake for 25-30 minutes or until just set (do not over bake).

Step 7

Cool then refrigerate at least 6 hours or overnight.
