"“Huli Huli" in Hawaiian means turn, turn. Chicken halves are cooked on metal frame screens that are turned repeatedly over a charcoal fire, somewhat like a rotisserie/BBQ. There are hundreds of recipes for Huli Huli but they generally share the basics of Soy Sauce, Ketchup and lots of Ginger. Basically it's a version of Teriyaki chicken with Ketchup, my 2 cents anyway, try it, it's very tasty."

Step by Step Method

FOR THE GRILL


Step 1

Since tomato products tend to burn on a grill, I would suggest rendering out the fat before brushing the Huli Huli sauce on, but some people do marinade it, up to you.

FOR THE OVEN VERSION


Step 2

Arrange chicken, skin side up, on rack of broiler pan.

Step 3

Broil 6 to 8 inches from unit in electric oven for 10 minutes on each side.

Step 4

Combine remaining ingredients;.

Step 5

Baste chicken and continue broiling for 10 more minutes on each side, basting frequently with sauce.
