"This is off a secret menu and looks great. It uses 6 eggs, I'm not but, if you want, you can double this. This one I figure will feed two comfortably anyway. lol It's served with fried potatoes sliced thin, kind of like a Gallette, so cut them on a mandolin. It has a lot of cheese."

Step by Step Method

Step 1

Heat butter.

Step 2

Fry onions and mushrooms until translucent.

Step 3

Season lightly.

Step 4

Add tomatoes and artichoke.

Step 5

Beat eggs, seasoning to taste.

Step 6

Pour over veggies and let set a bit.

Step 7

Layer heavy layer of cheese on top.

Step 8

Cover.

Step 9

Flip in half and pour warm hollandaise sauce over.

Step 10

Serve potatoes on the side if your having.

Ya know how sometimes you can love every ingredient in a recipe......but it just doesn't work for you? Well, unfortunately this was one of those recipes for me. The omelet wasn't pretty.......it was an off-green color. lol. I think that adding some additional seasoning and maybe some protein (bacon, ham, etc) would enhance the texture and flavor. Sorry, Dee. I still love ya and your recipes!
