Step by Step Method

Step 1

In a large frying pan, cook bacon slices until crisp. Remove and drain on a paper towel. When cool, crumble into pieces.

Step 2

Using the same pan, add onion, green pepper and garlic to bacon drippings and saute over medium heat until onions start to soften. Add remaining ingredients heat to a low boil. Reduce heat and simmer for 30 minutes.

Step 3

Divide between 2 large bowls (or 4 smaller bowls) and top with bacon pieces.

Made this for our New Years Day lunch and it was enjoyed by all. I toned down the spice level for some of our guests. I doubled the recipe and used 1/4 tsp of cayenne. I was especially pleased that both of my sons (20 and 24) liked this recipe. I grew up eating traditional black eyed peas cooked with ham hocks on NYD. I have been making black eyed peas for many a year now and this is the first time it has been enjoyed by all. That makes it a definite winner in my book. Thanks for sharing!

I had no bacon or canned black eyed peas, so started 1/2 cup of dry beans the quick way (boil 2 minutes and let sit for a few hours). I started my veggies with a small amount of olive oil. Added a little more than half cup of left-over Christmas ham, chopped. I cut everything else in half and it was the perfect amount for dinner for 2, along with salad and garlic toast. Decided to do a little southern to start the New year, if Black Eyed Peas bring a little prosperity in the New Year I'm good with that! Made as posted needing no changes. So easy so good and has already seen to a repeat. Another Mikekey recipe added to my favs cookbook. Thank you for sharing,
