Step by Step Method

Step 1

Cook and shred chicken. Set aside.

Step 2

In a large saucepan, cook mushrooms and garlic in hot oil over medium heat for 4 minutes, stirring occasionally.

Step 3

Stir in broth, vinegar, soy sauce, and chile oil or red pepper flakes; bring to a boil.

Step 4

Stir in chicken and coleslaw mix or napa cabbage; reduce heat to low and simmer uncovered for 5 minutes.

Step 5

In a small bowl or cup combine cornstarch with water. Stir into soup; simmer about 2 minutes or until slightly thickened. Remove from heat. Stir in sesame oil.

I made a trip to the Asian market so when I made the soup I presoaked some dried black fungus and I also added some little long tiny white mushrooms, don't know what they are called as it is in Chinese, and also used baby bellas instead of the shiitake mushrooms. This soup is so delicious that I had trouble not eating it all in one sitting, but since I am trying to lose some weight I declined to do that :) I will prepare this many more times as Hot and Sour Soup is my very favorite. I am so happy you shared it with us, so that I can have it as often as I like. Thanks so much T! Linda

A fairly easy soup to make with tasty results using the crushed red peppers for a little spice. It was great as part of my Chinese themed dinner!
