"A sweet and citrusy jello mold with the tanginess of horseradish. Make sure you use PREPARED horseradish, and not horseradish sauce. It's usually in the produce section. This salad is wonderful alongside a roast beef."

Step 1
Dissolve the jello's in the boiling water. Set aside to cool for about 30 minutes.
Step 2
With an electric mixer, blend the cottage cheese with the mayonnaise, sweetened condensed milk, lemon juice, and the horseradish. Remove the bowl from mixer stand and stir in the pineapple, salt, and pecans(if using).
Step 3
Fold in the slightly thickened jello, then pour into a large gelatin mold, or into individual serving molds. Refrigerate until firm, at least 2 hours.
Step 4
To release gelatin from molds, dip the mold in hot water for 30 seconds to loosen, then invert onto a serving plate.
