Step 1

Preheat oven to 425°F.

Step 2

Rinse chicken; pat dry.

Step 3

Skin chicken, if desired.

Step 4

Place chicken in a lightly greased shallow baking pan.

Step 5

Bake in 425°F oven for 15 minutes.

Step 6

Meanwhile, stir together mustard, soy sauce, and honey in a small bowl.

Step 7

Turn chicken pieces over and brush mixture generously over chicken pieces.

Step 8

Bake 20 to 25 minutes more or till chicken is tender and no longer pink, Turning pieces and brushing frequently with mustard mixture.

I scaled back for 2 serves and quartered a whole chicken and used 1/2 the breast, drumstick and thigh left intact and the wings (freezing the rest for later use) and baked at 175C fan forced for 45 minutes for flavoursome and juicy chicken which the DH and I enjoyed, thank you TeresaS, made for First Time tag game on FF&FF>
