Can also mix in 1/3 cup ground flax, I've swapped butter for applesauce, and egg whites for whole eggs, you can also add in a few tablespoons of natural peanut or almond butter"

Step by Step Method
Step 1
Preheat oven to 350 degreesF.
Step 2
Line muffin tins with paper liners or spray with cooking spray.
Step 3
In a bowl combine first 7 dry ingredients. Stir in raisins or nuts.
Step 4
In another bowl whisk next 4 ingredients; Gently (with a spatula) mix the wet ingredients into the dry ingredient just until combined (don't overmix).
Step 5
Spoon batter into muffin tins.
Step 6
Bake 15-17 minutes or until baked through.
