  • 1 cup raisins (or chopped walnuts or desired nuts, or a mix of raisins and nuts)
  • 1/2 cup egg whites (or 2 whole eggs)
  • 2 bananas, mashed (ripe, about 1 cup mashed)
  • 1/2 cup non-fat milk
  • 3/4 cup applesauce (sweetened or unsweetened, or 1/2 cup melted butter)

How to Make

  • Step 1: Preheat oven to 350 degreesF.

  • Step 2: Line muffin tins with paper liners or spray with cooking spray.

  • Step 3: In a bowl combine first 7 dry ingredients. Stir in raisins or nuts.

  • Step 4: In another bowl whisk next 4 ingredients; Gently (with a spatula) mix the wet ingredients into the dry ingredient just until combined (don't overmix).

  • Step 5: Spoon batter into muffin tins.

  • Step 6: Bake 15-17 minutes or until baked through.
