The simplicity of this salad makes it deserving of 10 stars! There's just nothing like fresh tomatoes, fresh basil, good quality balsamic vinegar. So Good. Finding Vino Cotto is nearly impossible in my area unless you order it. But considering that Vino Cotto is the precursor to balsamic vinegar, you can't go wrong in using it. Used a really good aged balsamic vinegar from Trader Joes that is phenomenal, making this salad WOW! Thanks so much, Pat, for sharing. Made it for FYC.
