  • 90 grams tomatoes, cut into different shapes (6 ripe heirloom tomatoes specified)
  • 2 tablespoons Vino Cotto
  • 1/4 cup Extra Virgin Olive Oil
  • Sea salt, to taste
  • 1/2 cup basil torn

How to Make

  • Step 1: Place tomatoes into a mixing bowl and drizzle with the Vino Cotto, set aside to marinate for fifteen to twenty minutes.

  • Step 2: Arrange tomatoes on serving dish.

  • Step 3: Drizzle over the Extra Virgin Olive Oil and gently toss together and season to taste with sea salt and freshly cracked black pepper.

  • Step 4: Place basil leaves on top just before serving.
