Step by Step Method
Step 1
Start rice according to package directions.
Step 2
Saute onion and garlic over med-hi heat in pan large enough to hold chicken.
Step 3
Meanwhile, mix together spices and rub into chicken. (I like subtle flavors, feel free to add as much spice as you like.)
Step 4
Add chicken to pan and cook, stirring frequently, about 8 more minutes or until no longer pink.
Step 5
Add coconut milk and bring to a good simmer, then turn down to med-lo and cook about 5 more minutes.
Step 6
Taste and adjust seasonings as desired. Serve over rice.
