Step 1: Start rice according to package directions.
Step 2: Saute onion and garlic over med-hi heat in pan large enough to hold chicken.
Step 3: Meanwhile, mix together spices and rub into chicken. (I like subtle flavors, feel free to add as much spice as you like.)
Step 4: Add chicken to pan and cook, stirring frequently, about 8 more minutes or until no longer pink.
Step 5: Add coconut milk and bring to a good simmer, then turn down to med-lo and cook about 5 more minutes.
Step 6: Taste and adjust seasonings as desired. Serve over rice.
