  • SAUTE
  • 4 tablespoons butter
  • 1 sweet onion, diced
  • 1/2 teaspoon crushed garlic
  • SPICE MIXTURE
  • 1 teaspoon chili seasoning mix (save the rest for another dish)
  • 1/4 teaspoon kosher salt (scant, less if using regular salt)
  • 1/4 teaspoon fresh ground pepper (scant)
  • 1/8 teaspoon cumin
  • 1/8 teaspoon cardamon
  • 1/8 teaspoon tumeric
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon clove
  • REMAINING INGREDIENTS
  • 24 ounces chicken tenders
  • 1 cup unsweetened coconut milk
  • 3 cups cooked rice

How to Make

  • Step 1: Start rice according to package directions.

  • Step 2: Saute onion and garlic over med-hi heat in pan large enough to hold chicken.

  • Step 3: Meanwhile, mix together spices and rub into chicken. (I like subtle flavors, feel free to add as much spice as you like.)

  • Step 4: Add chicken to pan and cook, stirring frequently, about 8 more minutes or until no longer pink.

  • Step 5: Add coconut milk and bring to a good simmer, then turn down to med-lo and cook about 5 more minutes.

  • Step 6: Taste and adjust seasonings as desired. Serve over rice.
