"This is a quick and easy Curry recipe I really enjoy. You can adjust the heat by decreasing or increasing the cayenne pepper. The ingredient list might seem long but it is all about the seasoning. The leftovers make a great salad, just chop up the chicken, toss over salad and use the sauce as your dressing, YUM!!!"

Step by Step Method
Step 1
Melt the oil in a skillet over medium-high heat.
Step 2
Season the chicken breast with salt and pepper and brown both sides in the skillet, about 3 minutes per side, until you have a nice light golden crust.
Step 3
Meanwhile, whisk together, the vegetable cocktail, tomato paste, ginger, garlic and remaining spices in an 8 inch casserole dish.
Step 4
Remove the chicken from skillet and place in the tomato spice mixture making sure to coat both sides.
Step 5
Cover and place in a preheated 350 degree oven until cooked thought and tender, about 1 hour, depending on how thick the pieces of chicken are.
