Step by Step Method
Step 1
Heat oven to 400 degrees F. Place chicken on foil-covered baking sheet. Top with salsa. Bake about 15 minutes.
Step 2
Take chicken out of the oven and add crushed chips and cheese. Return the chicken to the oven for 5 more minutes.
Step 3
Cook bacon in large skillet until crisp. Remove bacon from skillet and drain on paper towels. Discard drippings from skillet. Add onions to skillet and stir for 5 minutes. Stir in tomatoes. Cook 4 or 5 minutes until the tomatoes pop. Stir occasionally. Add rice and cook 2 to 3 minutes or until heated through. Stir occasionally. Stir in bacon.
