Ingredients

The ingredients are:
  • 4 small boneless skinless breast halves (1 pound)
  • 1/2 cup chunky salsa
  • 1/2 cup crushed baked totilla chips
  • 1/2 cup 2% milk shredded
  • Sharp cheddar cheese
  • 2 slices bacon chopped
  • 1 small onion, chopped
  • 2 cups grape tomatoes
  • 2 cups cooked long-grain brown rice
  • 1/4 cup reduced fat (or light sour cream)

How to Make

  • Step 1: Heat oven to 400 degrees F. Place chicken on foil-covered baking sheet. Top with salsa. Bake about 15 minutes.

  • Step 2: Take chicken out of the oven and add crushed chips and cheese. Return the chicken to the oven for 5 more minutes.

  • Step 3: Cook bacon in large skillet until crisp. Remove bacon from skillet and drain on paper towels. Discard drippings from skillet. Add onions to skillet and stir for 5 minutes. Stir in tomatoes. Cook 4 or 5 minutes until the tomatoes pop. Stir occasionally. Add rice and cook 2 to 3 minutes or until heated through. Stir occasionally. Stir in bacon.
