Step by Step Method

Step 1

Line bottom of 2 loaf pans with parchment paper and grease and flour sides.

Step 2

In large bowl combine flour, sugar, baking soda and cinnamon; stir in nuts and coconut; set aside.

Step 3

In separate bowl, combine remaining ingredients and stir until just moist.

Step 4

Mix dry ingredients with wet ingredients.

Step 5

Pour into 2 prepared loaf pans.

Step 6

Bake at 350F for approximately 1 hour 15 minutes

Step 7

Check center of loaf with toothpick and if it comes out clean, it’s done.

Step 8

Cool before removing from pan (about 15 min).

Deliciously moist...I made just one loaf...I had a couple of over ripe bananas and found this recipe...the hubby is doing a happy dance...he loves banana bread and this one had a few added surprises...coconut and pineapple...I thought I had crushed pineapple but I only had chunks...well...I just chopped them into tiny pieces...very tasty...mine only needed to cook for an hour...so keep an eye out during the cooking process...made for "Bill Board" tag game...

Loved it and so did everyone who tried it! I used a bigger can of pineapple and instead of 2 cups white sugar used 1 cup golden brown sugar and 1 cup dark brown sugar It was DELICIOUS! thanks
