Ingredients

The ingredients are:
  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 1 cup shredded coconut
  • 2 teaspoons vanilla extract
  • 3 large eggs, beaten
  • 1 1/4 cups oil (vegetable oil)
  • 2 cups mashed bananas (4 large)
  • 1 can (8 ounce) crushed pineapple (well drained)

How to Make

  • Step 1: Line bottom of 2 loaf pans with parchment paper and grease and flour sides.

  • Step 2: In large bowl combine flour, sugar, baking soda and cinnamon; stir in nuts and coconut; set aside.

  • Step 3: In separate bowl, combine remaining ingredients and stir until just moist.

  • Step 4: Mix dry ingredients with wet ingredients.

  • Step 5: Pour into 2 prepared loaf pans.

  • Step 6: Bake at 350F for approximately 1 hour 15 minutes

  • Step 7: Check center of loaf with toothpick and if it comes out clean, it’s done.

  • Step 8: Cool before removing from pan (about 15 min).
