" I love a good hash and this is an excellent recipe. I am not sure where I found this recipe but it was called The Luna Cafe Best Damned Hash. It is a do again recipe I have made some modifications to suit my taste. I used Hot Italian sausage if you do not like spice use a pound of plain ground pork."

Step by Step Method

Step 1

Cool your cooked potatoes and dice them, 1/2 inch cubes, set aside

Step 2

Put 1 tablespoon oil in a large skillet and saute the onions until golden

Step 3

Add the sausage meat, chili powder, oregano, basil, chili flakes

Step 4

Brown the meat well breaking up any lumps. When the meat is well browned remove all but a tablespoon of fat

Step 5

Add peppers and garlic, low heat, just heat through

Step 6

Meanwhile in another large skillet add 2 tablespoons oil and brown the potatoes, season with salt and pepper. Get them lovely and brown

Step 7

Gently mix the two skillet contents together, heat well and just before serving fry 4 eggs.

Step 8

Serve out the hash and put one egg on top of each serving enjoy
