Step 1: Cool your cooked potatoes and dice them, 1/2 inch cubes, set aside
Step 2: Put 1 tablespoon oil in a large skillet and saute the onions until golden
Step 3: Add the sausage meat, chili powder, oregano, basil, chili flakes
Step 4: Brown the meat well breaking up any lumps. When the meat is well browned remove all but a tablespoon of fat
Step 5: Add peppers and garlic, low heat, just heat through
Step 6: Meanwhile in another large skillet add 2 tablespoons oil and brown the potatoes, season with salt and pepper. Get them lovely and brown
Step 7: Gently mix the two skillet contents together, heat well and just before serving fry 4 eggs.
Step 8: Serve out the hash and put one egg on top of each serving enjoy
