"A delectable fondue and an excellent option to use up leftover champagne from the Holidays! Please remember that it IS acceptable to open up a new bottle to use the noted amount for the fondue and drink the rest! Though the title indicates "New Year", it's good for anytime such as for a weekend treat and especially appropriate for a special occasion."

Step by Step Method

Step 1

Create a slurry by whisking together the cornstarch and kirsch in a small bowl, and set it aside briefly.

Step 2

Rub the inside of a medium saucepan with the garlic clove. In the saucepan over medium heat, bring the Champagne and lemon juice to a gentle boil. Immediately reduce the heat to low and stir in the Brie. Blend the cornstarch/kirsch slurry into the cheese mixture and stir for a couple of minutes, until the mixture is smooth and thick. Transfer to a fondue pot over a flame and season with the pepper. Serve with bread cubes on fondue forks. Can also serve in small crock pot (you know, the small sized crock pots made for cheese sauces and the like).

NOTE: Other dipping options can include, but not limited to: Grape tomatoes, steamed pearl onions, cauliflorets, even cubes of cooked beef or chicken can be dipped into this fondue.
