Step by Step Method
Step 1
Lightly butter a broiler dish, set aside.
Step 2
Heat broccoli in microwave until hot 5 minutes.
Step 3
Melt 2 tablespoons butter with oil in a 12" heavy skillet.
Step 4
Add the chicken and cook until the juices run clear when pricked with a fork
Step 5
About 3-5 minutes on each side (don't overcook!).
Step 6
Remove chicken, set aside.
Step 7
Melt 2 tablespoons butter in the same skillet.
Step 8
Add mushrooms and cook over medium high heat until tender, about 5 minutes.
Step 9
Set aside.
Step 10
Arrange the cooked broccoli in a single layer in the bottom of the buttered broiler dish.
Step 11
Season the chicken with some lemon pepper seasoning (to taste), and arrange in single layer over broccoli.
Step 12
Preheat broiler.
Step 13
Melt remaining 2 tablespoons butter in a 1 quart saucepan.
Step 14
Whisk in flour and cook over low heat, stirring constantly, about 3 minutes.
Step 15
Pour in chicken stock and wine, whisking until completely blended.
Step 16
Continue cooking and stirring until the sauce thickens enough to coat a spoon.
Step 17
Add 1 cup Swiss cheese, stirring until melted.
Step 18
Taste and season with salt and pepper.
Step 19
Pour sauce over chicken and arrange mushrooms on top.
Step 20
Sprinkle additional cheese over dish to garnish.
Step 21
Broil about 6" from heat source until the top is bubbly and golden.
